Mexican Cream Guava and Fig Popsicles

On a strenuous hunt for the very-elusive figs, my dad happened to slip into a small Turkish fruit grocery a couple blocks down the street and came across Mexican cream guavas. So insanely fragrant, these guavas tempted him to try them, and a box of a dozen, golf-ball sized guavas managed to perfume our entire house. The guavas surprisingly weren’t as sweet as their aromas let on, yet still on my popsicle infatuation, I combined figs (yes we found them!) and guavas. This is perhaps the simplest recipe on this page but one of the most flavorful!

Ingredients:

12-14 Mexican cream guavas

2 lemons

2 limes

3 figs

90g sugar

80g water

Steps:

  1. Add sugar and water in a saucepan and heat to boil. Stir occasionally so the sugar doesn’t catch and burn on the edge of the saucepan, and cook until thick and clear. Cool to room temperature.

  2. Slice figs into very thin slices.

  3. Purée guava and sift the mixture through a sieve to remove seeds.

  4. Squeeze in juice from lemons and limes. Fully incorporate sugar syrup into the mixture.

  5. Line popsicle molds with fig slices. Pour guava mixture into popsicle molds.

  6. Freeze for at least 8 hours until completely solid.
